Prepare the Chicken and Eggs
Stovetop: In a large skillet, heat oil over medium-high heat. Chop up the chicken and cook in the skillet, turning occasionally, until golden brown and the internal temperature reaches 165°F, approximately 15-20 minutes.
Oven: Preheat your oven to 375°F. Arrange chopped up chicken pieces in a baking dish and bake for 25-30 minutes or until the internal temperature reaches 165°F. Set aside and allow to cool. 🍗🍳
Prepare hard-boiled eggs while the chicken is cooking.
Once cooked, shred the chicken.

Combine Ingredients
In a large mixing bowl, combine the shredded chicken, chopped hard-boiled eggs, finely chopped veggies, and finely chopped celery.

Add Yogurt and Olive Oil
Add the plain Greek yogurt and olive oil to the bowl. Mix everything together until well combined. The yogurt adds creaminess, while the olive oil provides healthy fats.
